If you’re finding it completely impossible to know what to cook, as the weather darts between “grey but weirdly sweaty” and “sunshine so blazing you need to carry your tower fan around on your person at all times”, you’re not alone: the sheer volume of packs of salami I’ve consumed over the past few weeks attests to that. But if, like me, you’ve exhausted picky bits (warning: it can happen), and you’re sick of staring into the fridge for inspiration that simply never arrives, I’ve got something for you. Here, I’ve enlisted five chefs from some of London’s hottest restaurants and bakeries to give us the inside account on their very best recipes for the summer months.
Consider the below to impress at your next outdoor soiree – or, more importantly, to break up the endless crisps and hummus dinners.

It’s hot, sure, but even when it’s baking outside, foregoing sweet treats is never an option. This is a view I share with one of London’s premier bakers, Adriann Ramirez, who oversees the wacky and wonderful creations at Fink’s. Their strawberry and pink elderflower galette is ideal for a summer dinner party: “It’s easy and your home will smell intoxicatingly of strawberry soda and vanilla – my love for cottagecore knows no bounds,” they say. “To make it even easier, store-bought shortcrust pastry works here a dream.”
